1 chicken breast (butterflied)
2 teaspoons Piri Piri dry spice rub
A good sprinkle of Maldon salt
1 teaspoon of coconut oil – start cooking in a hot pan
1/2 red pepper and 1/2 yellow pepper (sliced)
2 chestnut mushrooms (sliced)
3 stems broccoli (chopped)
1 handful spinach
3 slices of Jalepino’s
2 cloves of garlic
– add all of the above into the pan with the chicken (cook for 7 minutes)
On the side!
1/2 avocado
A good squeeze of lemon
And a bit of coriander

Honestly the flavours are just too good!


So with all the ingredients it looks like it could be quite a bit of prep time. You couldn’t be more wrong!

Slice and dice your veg.
Butterly and rub your chicken.
Whack in a pan.
Toss occasional whilst you dice up your avocado and squeeze there lime.
