This is a super easy dish and a very cheap one too, you can make it cheaper by getting brown rice, rather than Carmague, but I think that makes all the difference! (And a slower energy release carb)
50g Smoked Haddock
30g Red Carmague Rice
1/2teaspoon Cumin
A pinch of Smoked Paprika
1 Lemon cut into wedges
1/2 Spring Onion
A few Coriander Leaves
1/3 Chilli
1 – 6 minute, boiled Egg

Boil the rice for 11 minutes, onces cooked and drained stir in the spices.
Put the Smoked Haddock Fillet in a pan of boiling water, for 5minutes.
Flake on top of the rice
Cut up your boiled egg, chop the chilli and sprinkle with coriander. Season with salt pepper and lemon juice.
This is easily turned into a lunch or dinner dish by adding asparagus or green beans.
