Great post workout refuelling; another super tasty take on a classic!
1/2 can tuna
1/2 can sweet corn
2 slices of red onion
3 slices of red chilli
1 tsp coconut oil
Small handful mange tout
2 eggs
Sprinkle of parsley (optional)

Put the onion, tuna and sweet corn in the pan, cook for a few minutes
Add the mange tout and chilli
Tip out into a plate and put the coconut oil in the pan, whisk the eggs and tip into the pan, let it bubble up and put the topping on!
Sprinkle with delicious feta and sprinkle over the herbs!
